Ingredients
- 1 lb TBP Classic Raw PD Tail-Off White Shrimp
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 medium red onion, sliced
- 2 tbsp olive oil
- 1 1/2 tsp chili powder
- 1 tsp ground cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 lime, cut into wedges
- 8 small flour or corn tortillas
- 1/2 cup pico de gallo
- 1/2 cup guacamole
- Fresh cilantro
- Salt and black pepper
Preparation
- 1Combine chili powder, cumin, smoked paprika and garlic powder. Season the shrimp with half of the spice mixture, salt and black pepper.
- 2Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add bell peppers and red onion, season with the remaining spice mixture and sauté until tender-crisp with lightly charred edges.
- 3Move the vegetables to one side of the skillet. Add remaining olive oil and shrimp to the other side. Sauté until the shrimp is just cooked through and lightly caramelized.
- 4Gently toss the shrimp, peppers and onions together. Finish with fresh lime juice and chopped cilantro.
- 5Serve directly from the skillet with warm tortillas, pico de gallo, guacamole and additional lime wedges.
💡 Chef's Tip
Cook the peppers and onions first to develop a light char, then add the shrimp near the end so it stays tender and juicy while picking up the fajita seasoning.
